El Yucateco Achiote Paste is achiote (annatto) paste seasoned with spices, a fundamental ingredient of Yucatán cooking.
Dissolve it in bitter orange juice, vinegar or water and use it to marinate meat and fish. It is the base of cochinita pibil, pollo pibil and tacos al pastor, giving them their typical red-orange colour and an earthy, spiced flavour.
