The home of Birria in Florence
Birria tacos in Florence
The Mexican taco you dip in broth. Beef slow-cooked for 8 hours in chilies, a corn tortilla toasted on the griddle and hot consommé on the side: dip it before every bite. At Raíces it’s the dish people come back for.
What is birria
Birria comes from Jalisco, Mexico: meat slow-cooked in a sauce of dried chilies and spices until it’s meltingly tender. The cooking liquid isn’t thrown away: it becomes the consommé, a rich broth served hot next to the tacos.
That’s the whole ritual: take the taco, dip it in the consommé, eat it. Crispy outside, juicy inside.
If it’s your first time, get the Quesabirria: the tortilla with birria and melted cheese. It’s our number one dish.

At Raíces, in two locations in the centre: Raíces Via del Sole (near Santa Maria Novella) and Raíces Via dei Cimatori (between the Duomo and Piazza della Signoria).
How is birria made?
Beef slow-cooked in a sauce of dried chilies and spices. The cooking broth becomes the consommé you dip the tacos in.
What’s the difference between birria tacos and quesabirria?
Quesabirria adds melted cheese, which melts on the griddle with the meat. It’s the best way to start.
Are birria tacos gluten-free?
Our tortillas are made of corn, naturally gluten-free, but our kitchen also works with wheat flour, so we cannot rule out cross-contamination. For allergies and intolerances, always ask our staff.
